Strawberry coulis recipe

Very useful to have in the house, strawberry coulis is great for many things; pepping up porridge in the morning, drizzling on ice cream when you want to produce a quick dessert, or topping our vanilla cake with it are our favourite ways to use it. It really is very easy to make and you can use frozen strawberries when they're not in season. Keep your coulis in the fridge for up to three days and away you go.

2 tbsp water
1 heaped tbsp caster sugar
300g (10oz strawberries, halved
1 tsp vanilla paste (optional)
  1. Method

    Step 1

    Bring the water and caster sugar to the boil, stirring to dissolve the sugar.

    Step 2

    Add the strawberries and vanilla (if using) and cook for 4-5 minutes, or until soft.

    Step 3

    Purée the mixture until smooth.

    Step 4

    Store in the fridge for up to 2 days. Serve with ice cream or pancakes.
